Alice Waters, chef of Berkley California’s Chez Panisse and founder of the slow food movement, created The Edible Schoolyard, a gardening and cooking program on the campus of a Berkeley, middle school to introduce students in grades 6 to 9 to food.
An organic garden on school grounds is tended and harvested by students, with a focus on ecology, nutrition and food preparation. The book details the history of the program, the physical, psychological, and spiritual benefits of growing and harvesting your own food, and offers educators guidance to replicate the program.
